Heartburn/Acid Reflux Recipes - Stuffed Spinach Rolls
If you really can't bear the thought of spinach, then it might have been just the way it was cooked last time that put you off. I used to hate spinach until I found this recipe. The same goes for my friends, they don't like spinach either, but they do really like my spinach roll dish which is not only tasty and filling, but also very healthy, vegetarian and shouldn't trigger heartburn for most people.
The main ingredient in the filing is spinach (as you may have guessed), but I like to add a little mushroom or pepper too. Fry first the onion very well with a little low fat oil and then add in the mushroom and pepper. Slowly add the spinach, mixing well. A little low fat cream can be added if you want.
Spread some low fat cream cheese onto fresh lasagna sheets and then put a little blue cheese on top. Spread the spinach mixture over the lasagna, then roll the sheet and place into an oven proof dish.
Sprinkle a little more blue cheese and pine-nuts over the top of the rolls, along with about 1 - 2 tablespoons of cream. Place in the oven for around 20 minutes at the suggested temperature for the lasagna.
